As far as being easy to read in English, The Hobbit I would think would be fairly easy to read. The Belgariad by David Eddings would probably be an easy read. Robert E. Howard's Conan series. Richard Laymon has some easy reads, Brian Keene as well.

I think it doesn't necessarily move the story of the ka-tet along but does provide a bridge between Wizard and Glass and Wolves of the Calla that was much needed, we originally went from the Emarald City to Calla Bryn Sturgis too quickly I felt.
