I would imagine that they get most of them to sign the waivers at the time, you'll find that the people who are causing a scene are generally the ones who want lots of attention and would redily agree to being filmed for a national television show.
I LOVE this show though, I got hooked on it when I was living in Canmore and missed it when I went for six months without cable. I"m glad to be able to watch it again.
