Book about hunting down creatures?

This is somewhat specific, but I wanted to read a book about a character who spends the story hunting down different creatures and killing them (sort of like a vampire hunter book... but if you recommend one of these please make sure that its a great one thanks!)

I don't know why, but I am in the mood for a plot formula where a main character has to find and kill creatures (this sort of reminds me of the megaman games where you had to kill all of the bosses!).

I like the sci-fi genre, but I feel that the fantasy genre will yield the best results for this kind of book. I just want to read something 'monster-hunter-eque' focusing on the monster hunting aspect! I also like really cool, or freaky monsters, even gore is fine, magic, sci-fi, whatever... recommend away please people!

Does it have to be strictly creatures of fantasy or are you interested in "real" creatures as well? If so, have you read The Man-Eaters of Tsavo by J. H. Patterson?

More a psychological suspense than an action novel but I recommend Shaitan by Max Ehrlich.
If I can think of other titles I'll post them.
