I have a couple of books going, I always have one in my bag for commuting and just waiting around, I've got a children's chapter book going with my son and I also tend to keep a book in each room.

Sometimes if I'm having problems getting into a book I'll start another one & go back to the first one another time but usually it's one at a time.

Definitely several at once. I usually have several just for university literature classes, then a fiction novel of my own choosing and usually a nonfiction book as well. It is good to be able to switch it up depending on your mood...especially if you don't have the time to just sit down and read through a book.
