Already tried the TexMex Chicken and Rice...sorta. I didn't notice til Sunday morning, when I was putting stuff in the crockpot, that the recipe called for 'converted' rice..which to me sounds like Instant Rice..not wanting to take a chance and muck it up, and knowing I had plenty of leftover rice from Thursday's Kung Pao Chicken.. I just left the rice out and warmed up the leftovers to be added as we liked to individual bowls. The dish itself was rather soupy, so it worked out very well. I can see now, I need to buy a second crockpot...This book has a lot of great recipes I need to try.
